3 MINUTES 45 SECONDS

1. Weigh out 38g coffee and grind slightly finer than automatic drip setting.

2. Place Kalita on a vessel, put in filter, add coffee grinds (Note: Do not rinse the filter for this brew method.)

3. Place all on a scale and tare to zero.

4. With water just off boil, start timer and bloom coffee with 80g of water.

5. Let coffee bloom for 1 minute.

6. Add 80-100g of water quickly to break up the bloom.

7. Let water fall to almost meet the bed of the coffee. The timer will be at 1:30.

8. Bring the brew bed up quickly by pouring a half-dollar sized circle in the middle of the Kalita.

9. When slurry is close to the top of the filter, slow the stream and quickly pass close to the filter’s edge.

10. Allow the water to completely pass through the bed of coffee.

11. Swirl vessel and serve.
